The name Kann (“cane” in Haitian Creole) pays homage to Chef Gregory’s childhood memory of listening for sugar-cane vendors rolling wheelbarrows overflowing with freshly harvested cane.
Kann is a live-fire dinner house from celebrated chef, best-selling author, and television personality Gregory Gourdet that marries Haitian cuisine with the bounty of the Pacific Northwest.
Kann received the 2023 James Beard Award for Best New Restaurant, presented by the James Beard Foundation. [21] Michael Russell included the baked Haiti in The Oregonian 's list of Portland's ten best dishes of 2024. [22]

Gourdet even went on to open subterranean cocktail bar Sousòl underneath Kann in 2023, named one of America's best bars by Esquire. Coast to coast: Gourdet's taken his work outside Portland, too. In 2025 he launched five restaurants inside Printemps, a New York City department store.
